mexican dorito casserole

This one is a family favorite and its really easy! It takes about 45 minutes and serves about 6 people. We like the flavors in this dish, its a more hearty version of a taco bake. We have made it with and without the chips. When we make it without the chips, we put the finished casserole in tortillas and deep fry them! Anything deep fried in a tortilla is Jimmy’s favorite.

 

Ingredients

  • 1 lb Ramsey Red Angus Ground Beef

  • 1 can Ranch Style Beans

  • 1 bag Doritos (11 oz)

  • 1 can Rotel

  • 1 small Onion, chopped

  • 2 cups Shredded Cheddar Cheese, divided

  • 1 packet Taco Seasoning

  • 1 can Cream of Chicken Soup

  • 1/2 cup Water

Directions

  1. Pre-heat oven to 325 degrees.

  2. In a large skillet, brown ground beef and drain if needed.

  3. Stir in beans, Rotel, taco seasoning, soup and water.

  4. Simmer over medium heat until ingredients are well blended and heated through.

  5. In a 9x13 casserole dish, crush up enough Doritos to cover the bottom. Top with half the meat mixture and half the cheese. Repeat layers.

  6. Bake covered for 20-30 minutes.
